________________________________________________

Last week I was complaining about my lack of a meal plan and how quickly we went to "Plan B" everyday - eating out.

Not exactly what I had in mind for "Plan B".

I asked for inspiration and found it. Not only did you guys share with me, but I received a package in the meal guaranteed to get the juices flowing.

Literally.

Country Bob's sent me two bottles of their signature All Purpose sauce to review. Immediately I read through the recipe book, then hopped online to check out even more recipes.

Let me tell you, when they say "all purpose" they really mean it! You can use this sauce on beef, pork, chicken, soups, stews and even snacks.

Since I had over 12 pounds of ground beef in my fridge (Props to Kroger!) I decided to try their Meatball recipe. Now, I DO have a standby recipe for meatballs that involves chopping fresh garlic and onions, that's good. Very good in fact, but it's also a little time consuming because of the preparation.

Let me introduce you to Country Bob's (easy, no chopping) Meatball recipe:

Here's what you need:

3 lbs. ground beef
2 eggs
1/2 cup Country Bob's All Purpose sauce
1 envelope onion soup mix
1/2 cup Parmesan cheese
1/2 tsp garlic powder
Salt & Pepper
Spaghetti sauce

Mix all ingredients together. Form into golf ball sized balls. Brown in pan. Add Spaghetti sauce and simmer under done.

I served mine over whole wheat spaghetti noodles with a healthy green salad. It was delicious! And way cheaper than going out to eat.

From start to finish it only took me 30 minutes to put dinner on the table. I can honestly say I was very impressed with the overall flavor of the meatballs. Combined with the ease of the recipe, I'm putting this one at the top of my list.

Onto the giveaway portion of this post...

Country Bob's has offered to give two bottles of their All Purpose sauce to TWO of my readers. That's right, not one but TWO readers will receive their very own Country Bob package.

For your first entry all you have to do is leave a comment sharing your favorite summer food/recipe with me. (This is required!)

For a second entry, follow me and leave me a comment to let me know you are stalking following me.

For THREE extra entries, blog about this contest linking back to my post, and then leave me a comment to let me know you did.

Now for the fine print:

This giveaway ends on Monday May 4th @ 12 PM EST. I must have a way to contact you (blog, or email) or your entry will be deleted. The winners have 48 hours from the end of the giveaway to contact me with their mailing address.

My fav summer recipe is simple. Steak and potatoes.
For the steak, we prepare it with Adolfs meat tenderizer, salt, pepper, garlic salt, then stab it a million times and then soke it in worchershire (sp?) sauce. Then just bake the potatoes like normal.
I always love your giveaways!

I would love to win this... I need all the help I can get for "quick and easy" ways to feed my family.
My favorite summer recipe it:
Baked fish (toaster over)with baked potato (micro wave) and green salad. 30 mins. quick and easy, does not heat up the house and all 3 of my kids love it.

Already of follower... enter me in that for a 2nd chance :)

Recipe? Girl, have you seen me? I don't eat! Not buying it? Okay. hmm... I have lots of favorites but one that I ONLY make in the summer is pasta salad and it's easy cheesy. I cook one package of rotini noodles, the mixed color kind (it has regular pasta, spinach pasta and I can't remember what the red one is.) When it's boiled I drain and rinse in cold water. I generously add Italian dressing. I add black olives and sometimes cherry tomatoes and chill. Before serving I add Parmesan cheese. Yum. Now I'm hungry.

We love my hubby's grandma's potato salad. It's done by proportions, so take it up or down, depending on the amount of people you want to feed. For 4 people:

4 yukon gold potatoes, peeled, diced and boiled
4 eggs, hard boiled (I throw them in with the potatoes), diced
4 heaping Tablespoons of mayonnaise
4 dill pickle spears, finely diced

I mix the mayo and pickles together while the eggs and potatoes cook and add the potatoes to this while they are still very hot.

This recipe looks DELISH!

My favorite for summer? Other than steaks, I love barbecued ribs that have been slow cooked (in beer!) in the oven for a couple of hours before throwing them on the grill and slathering on the bbq sauce. With corn on the cob. Because you should get all of your messy finger foods done at one time.

I'm pretty sure I already follow you, but I'll go check and make sure. :)

I love anything light in the summer. Think yummy salads with something fresh off the grill. Steamed veggies, corn on the cobb, baked potato. . . All of those things scream summer to me.

BTW, I already follow you. :)

Would you believe that I've never made meatballs? Ever. But these look fantastic.

Favorite summer foods?
Anything on the grill. Such as:

A bunch of shrimp
A Bunch of melted butter (at least a stick)
A bunch of fresh garlic, minced
A bunch of worcestershire sauce
A bunch of fresh lemon juice (from about 3 or 4 lemons)
A bunch of thinly sliced lemons.

Fill a 9x13 casserole with shrimp.

Mix butter, garlic, lemon juice, and worcestershire sauce. Pour over shrimp.

Top with sliced lemons.

Bake at 400 degrees fro about 15-20 minutes.

BEST SHRIMP EVER!!! Promise you.

(Sorry for not listing precise measurements--I only measure when baking.)

hey girl.... i'm baaaaaaaaaaaack!! :)

how have you been??? i've been MIA I know... sorry. but i'm making some rounds today before taking Trevor to school.

the meatballs sound really yummy... too bad I feed a bunch of PICKY eaters and NO ONE but me and maybe Lauren would eat them... ugh. what weenies!! lol

My favorite summer recipe is really EASY!!!! you use keilbasa, canned or fresh pineapple and skewers, that's it! :) you cut the keilbasa into coin pieces, and you chunk up the pineapple, unless you are using it from the can, then it's already chunked ~ then you layer it on the skewer! and BBQ!! It is awesome. sweet and a little salty and just really EASY and yummy and most of all PERFECT for SUMMER!! :)

the end! (lol)

well gotta run, time to get the kids ready and out the door.

have a great day!!

xoxoxo

I love burgers on the grill. The recipe is simple.

For 4 folks, just combine:
2 lbs. ground beef
A dash or 2 of Mrs. Dash (any flavor...we like the spicy kinds)
About a half-cup of bbq sauce. Or in this case, I'd use Country Bob's.
Mix, shape into patties, slap 'em on the grill, and top with cheese.
DELISH!

BTW, wanted to remind you that today is Uncle Lynn's birthday, and I'm running a one-day POPrs giveaway to celebrate. Please come by!

I love grilled steak - just a little salt and pepper is enough or you can go more fancy. Serve with a bowl of fresh melon and I am good to go. In the summer especially, I like simplicity and cooking outdoors.
