Helpful Hints

Reheat Pizza- Heat up leftover pizza in a nonstick skillet on top of the stove, set heat to med-low and heat till warm. This keeps the crust crispy. No soggy micro pizza.

Easy Deviled Eggs - Put cooked egg yolks in a zip lock bag. Seal, mash till they are all broken up. Add remainder of ingredients, reseal, keep mashing it up mixing thoroughly, cut the tip of the baggy, squeeze mixture into egg. Just throw bag away when done easy clean up.

Expanding Frosting- When you buy a container of cake frosting from the store, whip it with your mixer for a few minutes. You can double it in size. You get to frost more cake/cupcakes with the same amount. You also eat less sugar and calories per serving.

New to Me Recipe - Ranch Dressing

When I got home I put together Pioneer Womans Ranch Dressing. I think it would have turned out better except for a chef's error.



Basic ingredients are mayo, sour cream, buttermilk (or milk), chives, garlic and parsley but I got all cute with it and added chervil. Big mistake...huge! (Like when that sales clerk wouldn't sell Julie Roberts any clothes in Pretty Woman. That huge.) SS and I thought it was too overwhelming for this recipe but S liked it and dumped a ton on his salad.





Verdict: Borderline okay (because of the chervil); try it but stay simple when adding ingredients.

While the dressing was blending together in the fridge I went ahead and prepped some chicken breasts that I got from Kroger on Saturday. Starting with a little over 4 pounds I made up a bag with Jerk marinade, one with italian dressing, a bag with three plain breasts so that I can throw them in the crockpot and I cooked the last 3
for shredded chicken dishes.

The mailman's coming!

And I know because they beep the horn. No really. Whenever we have an express package they pull in the driveway and beep the horn. For me to come out and retrieve my package, because apparently $16.50 does not cover door delivery. So today I hear the horn and run to the front door but I don't see anyone. Confused I walk back to my desk but then I hear knocking on the door...she's at the back door. She says "someone" told her it was easier to get us by going around back. Duh!

The ONLY reason she even attempted to deliver this time is because I complained last week about the delivery of my express packages. Seriously, for $16.50 you should get your behind out of the car and at least knock on our door, not just leave a "sorry we missed you" note in my mailbox when you didn't do anything but open the mailbox. Maybe their notices should have fill in the blank reasons and then she could at least be honest, "sorry I was too lazy to get out and do my job, now please drive 20 miles out of the way to the post office only to find out that we are suspiciously closed from 1-2 PM" since thats what happened to me on Friday.

I want to introduce you to my "beefy" neice Joelle Raelynn. She was born on May 5th at a whopping 8 pounds 15 ounces. I have 3 nephews so I was pretty excited to find out my sis was having a girl. And man, she is as precious as they come dontcha think?!

Menu Plan 6/9-6/15




We have a ton of stuff going on for the next two weeks so I'm keeping this menu plan simple and using frozen or ready-to-use items.

Monday: Pepperoni Rolls and a garden salad with ranch dressing

Tuesday: Spaghetti & Meatballs with leftover salad (meatballs from the freezer) & Focaccia bread (from the Farmer's market)

Wednesday: Graduation - take out for me and S; School is providing subway for SS

Thursday: Picnic - taking brownies (recipe to follow)

Friday: Graduation Party - taking baked beans

Saturday: Hamburgers & Macaroni Salad

Sunday: Fathers Day lunch - Mexican, so I will be bringing Bacon Wrapped Jalapenos and maybe some skillet corn from my Top 10 recipes that I want to try.

Saturday Shopping (Walmart & Kroger)

So yesterday I started my shopping day at the local Farmer's market, which to be honest lacks a lot of variety but I did pick up some fresh chives and some focaccia bread that smells heavenly. I'm using the chives for this ranch dressing recipe courtesy of Pioneer Woman.
After a very long and hot morning at our car wash fundraising event, I went to Walmart all pumped up with my coupons and to be completely honest, I've been so excited to go and use my Cascadian Farms coupons that it never occurred me that my Walmart didn't carry this brand. They don't. And then I found they don't carry the chocolate cluster Honey Bunches of Oats. I almost cried in the middle of the aisle. I had already envisioned myself being the envy of every shopper in my line and the thorn in my cashiers side, but alas I had to make do with a few other goodies instead.

Along with several other coupons I brought my total from $52.07 to $31. I was still happy and the lady behind me was still envious and the cashier...well, she was a very nice older lady who didn't care at all that I had a stack of coupons.

Then I went to Krogers and saved over $57 between my plus card and coupons. I also get an employee discount because my ss (stepson) works there and this month it is 15% off any Kroger brand item instead of the normal 10%. My best deals were 4 cases of Kroger water for $2.99 each (minus 15%), a dozen eggs for $1 (minus 15%), free Meow Mix, free liter of Aquafina water and 2 16 oz bags of Kraft cheese for $4. In total I spent $115 and I have enough groceries to last for at least two weeks (probably more considering everything that's going on during that time frame) and I should only have to buy lettuce and milk.
